Gazpacho

This recipe  dates back to the sixteenth century,  when tomatoes began to be consumed in Spain after the conquest of America.

It was a  typical food of Andalusian peasants,  being cheap and at the same time energetic and fresh to withstand the long days in the fields.

To prepare this cold soup, you will need the following ingredients:

  • Half a kilo of ripe tomatoes
  • Half a cucumber
  • A piece of green pepper
  • Olive oil
  • Vinegar
  • Bread
  • salt

You just have to cut the ingredients and blend them together. It is important to prepare it in advance to give it time to cool down in the fridge. It can be served with pieces of tomato, parsley or just a little olive oil.

Escalivada

We cross the peninsula from tip to tip until we reach Catalonia. Here, among the typical foods of Spain, we have the famous escalivada. This dish is also popular in Valencia, Murcia and Aragon. For its  low calorie and high fiber level, it  has earned a place in this Spanish health food ranking.

The name ‘escalivada’ comes from Catalan and means to roast. In fact, the recipe simply consists of roasted vegetables. Sometimes, for a more elaborate preparation, you can add some cod. If you want to try this dish, do it in large quantities. You can keep it in the fridge and use it as a condiment for many other recipes. It is ideal as a garnish for meat and vegetables, for sandwiches or toast  or as a main dish with cod or anchovies.

Although you can roast the vegetables you like best,  the typical recipe contains onion, tomato, eggplant and red pepper. You just have to roast these vegetables and then peel them and cut them into strips. To complete the dish, just add some salt and olive oil.

Ternasco: one of the best typical foods in Spain

In Aragon we find the Aragonese ‘Terni’. Ternasco is the young lamb, which weighs about 10 kg  and still feeds on mother’s milk and cereals. Given its age, it is a very tender, juicy and tasty meat.

In addition, it  contains a lot of proteins and vitamins. It is a perfect meat for children, adults and people who want to lose weight, as it contains very little fat.

The latest proposal has its roots in southern Spain, in Malaga. Spit refers to the action of skewering fish. As the name indicates, therefore, to prepare  it, the fish is skewered on rods and placed next to the fire. 

Usually sardines are used, but also other types of fish, such as sea bass or horse mackerel. This preparation can also be made at the barbecue, although it is usually eaten in the coastal places of Andalusia.

Even if the preparation seems simple, cooking the spit is an art. The sardines are skewered and salt is added. Then you put the rod next to the embers to cook the fish. This is one of the healthiest and most natural ways to eat it, as it contains just a little salt.
