1. Avocado dumplings

It is a very easy recipe to prepare, suitable for vegetarians and perfect to serve as an appetizer. To make these bundles you need sheets of puff pastry cut into a round shape (you can use the lid of a jar or a cup), a couple of avocado, lemon juice, mozzarella and tomato sauce.

Heat a corn tortilla, put a handful of grated cheese, two tablespoons of avocado puree, dehydrated tomatoes, salt, pepper and another layer of grated cheese. Close and cook over low heat. Repeat these steps with all the tortillas and eat them hot.

5. Salad with avocado, shrimp and tomatoes

Another of the most delicious avocado recipes you can enjoy is a fresh, colorful and healthy salad. Ideal if you are on a diet! You need one avocado, one egg, one purple onion, lettuce, half a cup of peeled shrimp, one tomato, seed bread (e.g. quinoa, amaranth, sesame), salt and olive oil.

Cook the egg in boiling water until hard, cut the avocado into slices or small cubes as well as the tomato. Julienne the onion and prepare the shrimp.
