Two Very Good Recipes With Basmati Rice

Basmati rice differs from other types of rice for the length of its grains, for the quality it maintains after cooking (it does not overcook) and because its grains, although they do not separate much, are not sticky. This type of rice has a white or brown color.

Basmati is a variety of rice characterized by the length of its grains and is famous for its delicate fragrance and exquisite flavor. In Hindi her name means “queen of fragrances”.

Both white and brown basmati have a cooking time of no more than twenty minutes. Due to the high amount of starch, the grains do not separate much during cooking, which is why many cooks wash them before cooking. If it is soaked for a period of time between thirty minutes and two hours, cooking will be easier.

Ingredients (for two people):

  • 150 grams of wholemeal basmati rice
  • 90 grams of peas
  • 90 grams of green beans
  • 50 grams of smoked tofu

  • 1 carrot
  • 1/2 Cup of cooked corn
  • 1 A piece of soaked kombu seaweed
  • 4 Spoons of soy
  • Rice vinegar
  • Extra virgin olive oil
  • Gomasio
  • 1 Pinch of turmeric
  • Sea salt
  • Chopped coriander

Preparation of the Fantasia recipe with basmati rice:

Grate the carrot and cut the green beans into small pieces. Then season them and mix well with your hands so that they begin to release the water. Finally pass them in a vegetable press for twenty minutes.

Wash the rice with running water to remove impurities. Put it in a pot with a clove of garlic and the kombu seaweed. Fill the pot with twice as much water as the rice. When it starts to boil, lower the heat and cover with a lid. Cook the rice until the water has completely evaporated (about 20 minutes). Rinse it with cold water and set it aside.

Fill a clock with water and put the peas in it, adding a pinch of salt. When it starts boiling, cook for ten minutes. Drain and set aside. Now, cut the onion into coarse pieces and sauté it in a pan with a drizzle of extra virgin olive oil. When it’s ready, set it aside.

Crumble the tofu and mix it with the soy and turmeric.

Put the rice in a bowl along with the finely chopped garlic and kombu seaweed. Add the peas, corn, olives and sauteed onion. Also add the carrot and green beans. Season with a little extra virgin olive oil, the chopped coriander and a sprinkle of rice vinegar. Mix well until all the ingredients are well blended.

In each dish put a portion of rice and on it a ball of tofu with soy. Add a sprinkling of gomasio and coriander and serve.

Basmati rice with squid and artichoke chips

Ingredients (for two people):

  • 8 Squid
  • 150 grams of basmati rice
  • 2 Artichokes
  • 1 clove of garlic
  • 1 nut of butter
  • Soy sauce
  • Waterfall
  • Vinegar
  • Extra virgin olive oil
  • salt
  • pepper
  • Parsley

Preparation of basmati rice with squid and artichoke chips:

Rinse the rice and cook it in a pot with water and salt. When cooked, add a knob of butter, let it melt and season with a pinch of pepper.

Finely chop the garlic and put it in a bowl with the chopped parsley and extra virgin olive oil.

Clean the squid and season with garlic and parsley oil.

For the vinaigrette, add a drop of vinegar and a drizzle of soy sauce to the extra virgin olive oil.

Clean the artichokes and cut them into thin slices. Fry them in extra virgin olive oil and, when ready, put them to dry on absorbent paper.

Cook the squid in a pan with a drizzle of oil. When they are almost ready, add the vinaigrette and a little water.

Arrange the rice in a bowl with the squid and artichoke chips on top. Add a splash of vinaigrette, chopped parsley and serve.
